Lemon and Blueberry Protein Cheesecake By @Aryasplate

It is always a pleasure to see our ambassadors use our products to create recipes and inspire all of us to be more creative in the kitchen.


Naturally, when the lovely Arya from @aryasplate on Instagram shared this cheesecake recipe on her feed, we thought more people should know about it!


It also helps when it is as quick and easy to follow as this one:


Ingredients:

  • 1 weetabix

  • 50ml liquid (I used oat milk)

  • 3 heaped tbsp @alpro vanilla soy yogurt (or other flavoured thick non-dairy yogurt of choice)

  • toppings: fresh blueberries, lemon zest, @anastasiaspantry lemon blueberry protein ball




Method:

  • Crush the weetabix in your ramekin and combine with the liquid (here, oat milk) add 1 tbsp at a time as the biscuit soaks up, stop when the mixture binds together and is slightly damp but still thick (you don’t want it to get runny)

  • Press the biscuit base down firmly and add a layer of yoghurt

  • Refrigerate for 3-4 hours, or overnight

  • Add some freshly zested lemon, fresh blueberries and for an extra plant based protein kick crumble our lemon and blueberry protein balls on top. (These bad boys have 7g of protein EACH!) Shop here.
